First off, when does summoning sickness wear off? For instance, if I play something that has a tap ability such as birds of paradise, can I tap it during my opponent's turn?
Secondly, if something like Captivating Vampire requires other vampires to be tapped, does summoning sickness stop them from tapping?
And finally, if I play a creature with flash on my opponent's turn, will it be able to attack on my turn?

a creature has summoning sickness if it was not under your control at the beginning of your turn.
you can still tap a creature with summoning sickness if the ability belongs to another source. (ie: tapping vampires for Urge to Feed)

In order: The beginning if your next turn, if it doesn't have summoning sickness, nope, yep since the summoning sickness wears off at the beginning of your next turn.

captivating vampire from how its read the tap 5 vampires and gain control of target creature isn't and actuall tap ability so you could tap creatures with summoning sickness

I'd like to clarify this to be specific: If it has the :symtap: symbol or the :manan: symbol, those cannot be used while the creature has summoning sickness. If a card says something like 'tap an untapped creature you control: etcetc' then you can while the creature has summoning sickness.
